Comfort Food After a Long Week
Last week was a killer. None stop and lots of action. It finally caught up with me today.
Tonight I really wanted some good, old fashioned comfort food, so....
Lemony Mushroom Risotto
Here is what you need:
- 3 cups cremini mushrooms quartered
- 6 cups chicken broth
- 1/2 stick unsalted butter
- 1 small onion, chopped
- 1 cup Arborio rice
- 1 cup dry white wine
- zest and juice of 2 lemons
- 1/4 cup finely grated Parmesan cheese
- salt and pepper to taste
Heat butter and olive oil in a heavy deep pot and saute onions.
When the onions are transparent add the rice and stir for one minute.
Add the white wine.
Begin to add the chicken stock cup at a time until absorbed, stirring frequently.
When the rice is the right consistency add the mushrooms and stir for one minute.
Add the lemon zest and juice and stir.
Add cheese and stir.
Its always a hit around our house.
